At the sale on the village green on Monday I was lucky enough to buy the most delicious lemon loaf cake ever – so delicious that I’m offering £5 to Dovedale House if the baker would be kind enough to share the recipe?
Meg, the very easy recipe is:
Luscious Lemon Cake:
4 oz soft margarine
6 oz caster sugar
6 oz self raising flour
4 tblsp milk
2 large eggs
grated rind of 1 lemon
and for the Syrup:
3 rounded tblsp icing sugar
3 tblsp fresh lemon juice
Grease & line a 2lb loaf tin. Set oven to 180 C (fan oven). Cream fat & sugar, add eggs, sifted flour, finely grated lemon rind & milk. Mix well to a soft dropping consistency. Put in tin, smooth top and bake for about 40 mins until firm. Mix sifted icing sugar and lemon juice and pour over cake as soon as it comes out of the oven. Leave in tin until completely cold. Enjoy!
